Cabbage Apple Salad with Creamy Honey Lime Dressing

Salad ingredients:

4 cups coarsely shredded cabbage, green, red, curly or a mix is pretty

1-2 tart apple (Granny Smith, Honeycrisp, or Pink Lady all work well), peeled and chopped

Thinly sliced red onion, or green tops of green onions

1 cup chopped walnuts

 

Dressing ingredients:

1/3 cup honey

1/3 cup fresh lime juice

1/3 cup sour cream

Zest from one lime

1 ½-2 teaspoons ground cinnamon

Kosher salt and freshly ground pepper

Toast walnuts by placing them in a heavy (or cast iron) skillet over medium high heat, shaking and stirring a couple minutes, until fragrant and beginning to lightly brown. Remove from heat and hot pan immediately.

Mix cabbage, apple, and onion in a large bowl.

Whisk honey, lime juice and zest together in a small bowl. Whisk in sour cream. Add salt and pepper to taste, then stir in cinnamon.

Pour over salad ingredients in bowl, stir, and top with toasted walnuts.

Can be made an hour ahead and refrigerated.

Serves 6-8.
